Video documenting the local food and wine traditions with the aim of disseminating the traditions compatible with the principles of the Mediterranean Diet, systematized in the Archives of the Memory of Italian cuisine.
The project was born from the desire to celebrate and promote the Mediterranean Diet and with it the territories that express its cultural, environmental and productive excellences.The recognition of the Mediterranean Diet as an intangible heritage of Humanity by UNESCO, has consecrated the economic and social value assumed by food Made in Italy due to the productive and nutritional records of the main basic productions such as fruit, vegetables, pasta, wine and olive oil, cheeses and bakery products, recognition also linked to the historical value that has assumed this food model in lifestyles and for scientifically proven benefits.
The project aims to collect, analyze, document and tell the richness of these traditions on the table, leaving traces able to recover the oral tradition in the preparation of dishes handed down for generations and make it digitally usable over time.
